Quiche Indienne- Jamie Olivers classic twisted to our tastes

Lately I have been cooking up a lot of Jamie Olivers recipes.Like all good recipes they are based on classic ones and his cheese and mushroom quiche is a nice take on the French Quiche Lorraine with its smoked bacon, creme fraiche and that famous french butter.

Just as Jamie is a bit  conservative with the garlic and onions, to suit English tastes, I tend to go a little to the hot side.Adding more  garlic, chillies, more onions and vegetables  and reductions in the cheese and cream which I find too heavy for our weather.So here is Jamie's Quiche with a twist. An Indian twist.

Here is a nice fairly quick recipe . Nice for a monsoon lunch for four with a plate of salad on the side.

Ingredients:

For the pastry base:

220 gms of flour

110 gms butter

1/2 tsp salt

3 tbsp ice cold water

For the filling:

1 tbsp olive oil

100 gms bacon, chopped

1 medium onion, chopped fine

6 cloves of garlic, minced

100 gms mushrooms, sliced

3 spring onions, sliced

3 large size mild chillies , as above ( like jalapenos ), remove the seeds and chop

4 eggs

75 gms double cream

75 ml milk

50 gms cheddar cheese, grated

Salt and pepper to taste.

 

Method:

Preheat oven to 180 degrees.

Mix the butter into the flour with your fingertips till it resembles breadcrumbs. Add the water and gather into a ball swiftly without handling too much. Keep wrapped in the fridge for half an hour.

Grease the pie dish with a bit of olive oil. Roll out the chilled dough to fit the base. Cover with dried peas. rajmha or channa and cook blind in the oven for 12-15 minutes.

Remove the peas.

Heat 1/2 tbsp of olive oil and fry tthe chopped bacon. remove then fry the garlic and onions in the same oil. Add the chopped spring onions, the chillies and fry for a couple of minutes. Last of all add the mushrooms and saute till changed in colour.

Arrange this on the cooked pie base.

Beat the eggs, add the cream and milk and beat some more. Add the cheese and season with salt and pepper. Pour over the other ingredients in the dish.

Bake for 30-40 minutes.
