While prices of grains and vegetables rise and rise and rise we spend little time thinking about sustainability of food and our food sources. Listen to the visionary Chef and scholar Dan Barber.We would do well to think beyond as he does;;;

Sheengdana aur Hari Mirch ki Chatni/ Peanut and Green Chilli chutney

Chilli-and-peanut-chutney-0

Chutneys are a great way to add a new flavour to your plate without slaving away in the kitchen for hours.This one has an interesting texture and a piquant taste.

Ingredients

  • 4 heaped tablespoons roasted peanuts. (Do not roast too long or they get a bitter taste. Just long enough for the skins to change colour and come off the peanut.)
  • 4 green chillies finely chopped.
  • 1/4 tsp salt.
  • Juice of 1/2  lime app. 11/2 tbsp.
  • 2 teaspoons gur or brown sugar.

I actually like to make this with the peanut skins on. Put all the ingredients into a blender and grind. . dont make it too smooth. Its quite nice just roughly mashed.You can add  with 1 tablespoon of water if you want to make it more smooth. Tastes delicious with julienned carrots .
