Green Pepper/ Capsicum and Potato Vegetable- Simla Mirch aur Alu ki Bhaji


Simla Mirch Alu Sabzi

This is one of those superfast standby recipes for when I don't feel like spending time in the kitchen.

Ingredients

4 medium sized potatoes
4 medium sized Simla Mirch/green peppers/ capsicum
1 tbsp vegetable oil
1 green chilli chopped fine (optional)
1 tsp jeera/cumin seeds
A pinch of hing / asafoetida
2 teaspoon dried split channa
2 tsps udad dal soaked.
A pinch of haldi / turmeric
3 tsp of dhania/ corainder powder
1 tbsp chopped green coriander leaves

Boil the potatoes, peel and cut them into cubes.Deseed and cut green peppers into 10 pieces each.Heat the oil in a kadhai,saute the green chilli then add and fry the dried channa and udad dal till golden brown. Turn heat low and add the haldi / turmeric, dhania powder / coriander powder and the hing/asafoetida. Immediately add the Simla Mirch/ green peppers, stir and cover tightly. Cook on low heat for 10- 15 minutes till the peppers are done. Add the potatoes and mix thoroughly. Garnish with a tablespoon of chopped coriander.
