Matki aur Kheera Salad -Sprouted Beans, Cucumber and Iceberg Lettuce Salad
Here is a really simple salad to make on a busy day.
100 gms matki /sprouted moth beans
1 small head of iceberg lettuce
1 cucumber chopped into small cubes.
2 cloves crushed garlic
1 tsp olive oil
Juice of 1/2 lime
1/2 tsp freshly ground pepper
Salt to taste.
Take the two cloves of garlic and rub a creamic bowl with them.
Heat a litre of water to a rolling boil. Dunk in washed sprouts/matki and cook for 2 minutes. Drain well.
Wash lettuce thoroughly. If you do not have a salad drier, put lettuce in the centre of a clean tea towel , gather all four points of the tea towel together and swing around the head like a lasso, a couple of times. Your lettuce will now be sufficiently dry. Gently tear into pieces.
Put lettuce, chopped cucumber and matki in the bowl and add the oil , lime juice, pepper and salt. Mix well.
